Ingredients:
1 cup of quinoa (rinsed and drained)
2 oranges
1 red pepper- diced
1 jalapeno- diced
1 can of black beans- drained and rinsed
1/2 can of corn- drained
1/3 cup red onion-chopped
2 TBS of fresh parsley--- the original recipe called for Cilantro-- I hate cilantro so I used parsley!
Dressing
1/4 cup of olive oil
1/4 cup of apple cider vinegar
1/4 cup of fresh orange juice
zest of 1 orange
1 TBS of sugar
Directions:
Cook quinoa according to the directions on the bag. Mix together dressing using the juice and zest from one orange saving the other for the salad. Set dressing aside to allow the flavors to mix. Cut up veggies, cans of beans and corn and combine with quinoa. Pour dressing and stir. Enjoy now or save for later-- Even better the next day once the flavors really mix in.
