Eggplant

So I asked several friends for eggplant recipes when I got an eggplant in my produce box this week. I like eggplant parm- but the one thing I don't like is the sogginess of the eggplant. So was searching the Internet for other recipes.   I found one!! However, as usual to me didn't totally follow the recipe. 
It's an eggplant spaghetti bake. 

First you cut your eggplant into squares toss in 1- 1 1/2 tbs of olive oil and add salt and pepper.  Roast at 400 for 30 min on a baking sheet.  Meanwhile pick your favorite spaghetti ( I had spinach and chive linguine from TJs on hand. 
I used half the bag and cooked to the regular directions. Drained than set aside.

Then chop one small onion and one small pepper and add to a hot skillet.  Wait two minutes that add 1lb of ground beef (next time Imight try hot sausage).brown accordingly. Sprinkle red pepper flakes on the meat ( I added a lot - but I like it spicy.) next add your favorite sauce.... I used Toscana marinara 
Mix together and set aside for ten minutes. During this time pour yourself a glass of wine. Next add 3/4 c of mozzarella cheese and a handful of Parmesanand mix. Put in a greased 9x13 add another small handful of Parmesan and sprinkle on bread crumbs. Bake at 375 for 20 minutes. Enjoy :)
