Tonight, we had pork chops with stuffing, vegetables and peaches. I used HT pork chops-thin slice no bone. I went the easy route and used stove top! While that was cooking, I chopped up red potatoes, a onion, red pepper and mix Ina bowl with a little olive oil and garlic powder.
On a hot skillet I cooked the potato mixture for 15 minutes then added the sliced squash.
Cooked for another 15 adding fresh thyme and red pepper flakes. The pork chops took about 45 min.while it cooked I enjoyed some Pinot....
The dinner was delicious with happy plates at the end.... Still waiting on the hubby todo the dishes :)
